Paul's decades-old Caribbean Bakery, not much more than a counter and a refrigerator in the front, is a case in point, serving plump burgers with lentils, hummus and other fillings. The ground beef version comes in its characteristic yellow dough, soft on top and somewhat crunchy on the edges.
